Hello! And welcome to A Bite of Sugar! I have a love for baking and can spend hours in the kitchen baking up some of my favorite treats. There are a lot of baked goods I could write my first post about, but I decided that cookies are a pretty good place to start, right?
These are graham cracker chocolate chip cookies and they are delicious! I guess I should preface this by saying I'm not the biggest chocolate chip cookie fan. I like them just fine but I would rather have a sugar cookie or a cake, yum (I made my mom some chocolate chip cookies for mother's day and they were great)!
So these cookies came about because I had some leftover graham cracker crumbs from a cheesecake I baked my sister (recipe soon). I knew there had to be something I could make with them. So I headed to trusty google and found these cookies. I had all the ingredients so why not? They turned out amazing. Soft, chewy, and chocolate. Perfection. I made a slight change to the original recipe that I found to be great. I added 1/2 teaspoon cinnamon because I love it with graham crackers. I always add a pinch to my cheesecake crusts and I love it. I also found that I needed to bake them for a little longer. It's totally an oven thing and I find that really knowing your oven is essential. I always like when my cookies are just a little soft in the center, slightly under baked but not completely gooey. Other than that, the recipe is easy, delicious, and you probably already have most of the ingredients. They were also a big hit with my family.
I managed to get about 18 cookies from this recipe, but I like big cookies. You could definitely make more if you prefer them smaller.
Ingredients:
- 1/2 cup (1 stick) butter, room temperature
- 1 cup brown sugar
- 2 teaspoons vanilla
- 1 egg
- 1 1/2 cups graham cracker crumbs
- 3/4 cup all purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 1 cup chocolate chips (next time I would add more)
